Despite the rapid expansion of modern retail formats across the continent, Africa's fresh meat trade remains anchored in specialized and traditional commerce. Analysis of consumer behavior across 20 key African markets reveals a retail environment defined by regional fragmentation and a durable consumer preference for trusted, specialized vendors over convenience-led formats.

The specialist dominates. Butcheries capture 30% of the continental market, the single largest channel, reflecting a consumer culture built around specialized expertise and direct vendor relationships. In Angola (62%) and Kenya (61%), the standalone butcher is effectively the default destination for fresh meat.

Modern retail is rising, but unevenly. Supermarkets have gained meaningful ground in more formalized economies, particularly in Mozambique (58%) and South Africa (38%). Yet on a continental average, open-air markets (23%) still outpace them, a gap sustained by persistent cold chain limitations and price sensitivity in dense urban and peri-urban areas.

Digital commerce is nascent but notable. Online meat retail averages just 8% across the continent, but Algeria stands apart at 36%, a signal of maturing logistics infrastructure and a potential blueprint for digital expansion across North Africa and higher-connectivity markets.

Proximity drives the final purchase. Traditional neighborhood grocers account for nearly 1 in 5 meat purchases, reinforcing the critical role of last-mile convenience, particularly in residential areas underserved by large-format retail.

Implication for stakeholders. There is no single "African meat market." Winning in the meat value chain demands a localized distribution strategy, one that respects the entrenched dominance of butcheries, bridges the cold chain gap in traditional market strongholds, and positions for the digital and formal retail shifts emerging in distinct regional clusters.
